Tuscan Kale Salad

After ordering this delicious salad from one of my favorite restaurants, True Food Kitchen, I was determined to find a way to recreate it in my own kitchen!


  • 6 cups kale, stem and center vein removed
  • juice of 1 lemon
  • 3 tbsp extra-virgin olive oil
  • 2 cloves garlic, minced
  • 2/3 cup Parmesan cheese, grated or shredded
  • salt & pepper
  • crushed red pepper
  • 1/2 cup bread crumbs (optional)



For dressing: Whisk together lemon juice, olive oil, garlic, salt, pepper, and a pinch of hot red pepper flakes. If you want it a little more spicy, add some more red pepper flakes!

Pour the dressing over kale and toss well.

Add Parmesan cheese and toss again.

Let kale sit for around five minutes. Add bread crumbs, sprinkle a little more cheese and enjoy!
