Gluten-Free Banana Oatmeal Pancakes

Last weekend when my daughters woke up, they wanted my easy (and healthy!) oat pancake breakfast and pleaded for me to put a few chocolate chips in. They had some friends sleeping over and I wasn’t aware that one of the little girls couldn’t have gluten. Thank goodness that Quaker had just sent me their new gluten-free oats to sample—I was able to make my simple pancake recipe and the little girl was so excited she could eat what everyone else was–and that it was delicious pancakes to boot! Phew!

I love this recipe because it’s packed with nutrients—and naturally sweet from the banana! The oats are heart healthy and made with 100% whole grain oats, fiber, vitamins and minerals. The egg boosts the protein, as well as the Greek yogurt, which also adds calcium. These are super satisfying—I can’t wait for you to try them!

Banana Oatmeal Pancakes
Makes roughly 8 pancakes
1 cup quick oats or rolled oats
1 very ripe large banana
1/2 cup nonfat honey flavored Greek yogurt (can also use Vanilla flavored or berry or lemon)
1 egg
1 1/2 teaspoons cinnamon
Optional toppings: Honey, banana sliced, slivered almonds, dried cranberries (we used a few chocolate chips for the sleepover)

1. In a medium bowl, mash the banana with the yogurt, mixing the banana into the yogurt until it’s smooth and thoroughly combined.
2. Stir in the oats, cinnamon and egg.
3. Spray a medium sized pan with oil from a spray container and heat over medium heat. Spoon a small amount (a little less than ¼ cup) of the mix into the pan. Depending on space in pan, add several more ¼ cup spoonfuls to the pan with enough space in between to allow the pancakes to grow. Once the pancake starts to set, flip it.
4. Then cook until the other side sets. Once set, remove from heat. Continue making pancakes until the batter is gone!
