Ingredients:
1 pound thin-sliced turkey cutlets
1 cup panko crumbs
¼ cup teriyaki sauce
2 garlic cloves, minced
3 tablespoons brown sugar
1 teaspoon rice vinegar
1 egg, lightly beaten
2 scallions, thinly sliced
Cooking spray of your choice
Salt and pepper to taste

Preheat the oven to 400 degrees. Next, heat the teriyaki sauce, sugar and rice vinegar in a small saucepan over medium heat until the sugar dissolves completely and the sauce has thickened slightly. Stir in the minced garlic and remove from heat.

Line a cookie sheet with foil and coat with non-stick cooking spray. Pour the panko into a shallow dish and beat the egg in a separate dish. Lightly salt each turkey cutlet before dunking each into the egg wash. Allow any excess egg to drip off the cutlet, and then dip it into the panko. You might need to flip it around to coat completely.

Lay each piece flat onto the cookie sheet. Sprinkle the cutlets with salt and pepper, and then lightly spray each with cooking spray. The panko should glisten and not look dry.
Pop the pan into the oven for about 15 minutes until the crust is golden and the meat reads 165 degrees Farhenheit on a meat thermometer.

Lemon Turkey Cutlets with Herb Veggies
This Mediterranean-style recipe is a light and refreshing way to prepare turkey cutlets.

Ingredients:
1 pound thin-sliced turkey cutlets
1 fresh lemon, squeezed
2 tablespoons olive oil
1 medium zucchini, cut into ½-inch rounds
1 medium summer squash, cut into ½-inch rounds
3 Roma tomatoes, quartered
1 small onion, sliced thinly
2 cloves garlic, chopped roughly

Marinate the turkey cutlets for about 30 minutes in the lemon juice and 1 tablespoon of the olive oil while you prep your veggies and preheat the oven to 425 degrees.

Line a 9-by-13 baking dish with foil for easier cleanup, then spread all the vegetables at the bottom. Drizzle the vegetables with the remaining oil and toss them a bit to coat evenly. Last, sprinkle them with the garlic, oregano, salt and pepper to taste.

Next, lay the turkey cutlets over the vegetables in a single layer, and crumble the feta cheese over the turkey. Sprinkle a little oregano, salt and pepper over the top.

Bake the dish for about 15 minutes and remove when a meat thermometer inserted into the thickest turkey cutlet reads 165 degrees.
