Healthy Kale Salad with Homemade Croutons

Want to whip up a healthy lunch in a flash? This light and fresh kale salad is super easy and extremely delicious. Did I mention the homemade croutons?

Ingredients

  • 1 large bunch of kale
  • 1/4 loaf of rustic bread
  • Olive oil
  • Salt
  • Parmesan cheese
  • Freshly ground black pepper to taste

Lemon Dressing Ingredients

  • 2 small garlic cloves (smashed with garlic press)
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon pepper
  • 3 tablespoons extra-virgin olive oil
  • Freshly squeezed juice of one large lemon
  • 1/4 teaspoon red pepper flakes

Directions

Preheat your oven to 425 degrees.

Prep your salad by washing and drying your kale. Then rip into small pieces and place in a large bowl. Set aside.

Cut your 1/4 of a rustic bread into small 1 inches squares (I left the bread out over night so it would be a little bit hard).

Place the bread pieces on a baking pan and coat with a little bit of olive oil, salt and pinch of black pepper. Sprinkle a little bit of Parmesan cheese on top.

Bake for about 5 minutes until slightly brown.

While the croutons are baking, mix together your lemon dressing ingredients.  Whisk it up with a fork.

Remove bread from the oven, and toss together with the kale and some Parmesan cheese.

Drizzle on the dressing and enjoy!
