Here’s a great way to indulge in a delicious brownies without breaking your gluten free-dairy free diet!
- 2 oz of Dark Chocolate
- 1/2 cup of Vegan Butter Spread (I use Earth Balance)
- 2 Eggs
- 1 cup of Sugar
- 1 tsp. of Vanilla
- 1 cup of Almond Flour
First pre-heat oven to 350 Degrees. Take a 8x8x2 pan and spray it with a non-stick cooking spray.
Put a pot of water on the stove and place a small metal bowl on top of boiling water. Add the dark chocolate and vegan butter spread to metal bowl. Stir until melted and combined.
In a separate, slightly larger bowl, combine eggs, sugar and vanilla. Add the chocolate-vegan butter mixture to the egg mixture. Mix well.
Lastly, add the almond flour to the mixture and stir until just combined. Add the batter to the greased baking pan. Bake for around 40 minutes. These brownies are very moist. It is best to let them cool before serving.
