Energy Boosting Egg Salad Sandwich Recipe

It’s National Egg Salad Week! Wanna know how to eat egg salad to keep your energy level high?

The key is to avoid using too much fatty mayo. Too much mayo makes you sluggish because it takes a long time to digest all of that fat; the blood and oxygen go to your stomach and stay there for hours to work on digestion, diverting it away from your brain and muscles.

Make sure you egg salad is served with a high fiber food– like whole wheat bread, Wasa or Ry-krisp crackers, which will give you energy while the egg salad extends the energy boost from the high-fiber food.

Try this recipe which cuts back on the high fat mayo and keeps the portion size in check so that you don’t overdo it.

Energy-boosting Egg Salad

(Makes 3 servings)

Ingredients

  • 4 hard-boiled eggs
  • 1 tablespoon of mayonnaise
  • 1 tablespoon of non-fat Greek yogurt
  • fresh chopped celery (we like to use LOTS)
  • basil (you can use dill or parsley if you prefer)
  • salt (pinch)
  • pepper (to taste)
  • pinch of smoked paprika.

 

Directions

Mix together all ingredients. Serve on whole grain bread or crackers with lettuce, tomato and cucumber. Yum!
