Chicken Noodle Soup Recipe

At the end of a busy week, the last thing you want to do is worry about what to make for dinner! 

Why not serve a healthy homemade soup? It’s a super simple meal that will fill your family up without weighing them down.

ModernMom’s very own Lisa Rosenblatt shares her recipe for chicken noodle soup a la angel hair pasta – it’s sure to hit the spot!

Chicken Noodle Soup Recipe

Ingredients

  • Chicken broth
  • Cooked chicken (we recommend Lisa’s basic chicken recipe)
  • Carrots, chopped to bite size
  • Celery, chopped to bite size
  • Leeks, chopped to bite size
  • Onion, chopped fine
  • Angel hair pasta, cut into more managable pieces, or left long for slurping fun

 

Directions

Prepare your chicken the way you like it. You can also use a rotisserie chicken from the grocery store, or pre-packaged grilled chicken strips.

Boil your pasta until it is cooked, and then drain it.  We recommend angel hair pasta, but use whatever your kids love (macaroni, fun colored veggie pasta, you name it).

Add a full box of your favorite chicken or veggie broth to a pot and set to boil.  Add in the veggies, and let them cook for a soft consistency.  Then add in your pasta and chicken.  Let those become nice and warm.

Serve for a healthy, quick, weeknight dinner or a warm lunch on a chilly day.
