Grilled Chicken Strips with Homemade Ranch Dipping Sauce

So, here’s the scene: the kids are in the back of the car on the way home from school, and they’re screaming for chicken nuggets from the fast food place around the corner.  Don’t give in!

Michelle Karam has the perfect recipe that won’t take any longer than going through the drive-through.  You’ll feel so much better about what you’re giving your kids, and they’ll get their chicken strip fix!

Grilled Chicken Strips

Ingredients

  • chicken breast tenders (the fresh, raw kind in the meat coolers)
  • garlic salt
  • salt
  • pepper
  • olive oil cooking spray

Directions

Season your tenders with salt, pepper, and garlic salt (or powder).  Use whatever you like to give them a little flavor.  You might add a little heat with some cayenne pepper.

Spray your grill pan.  Turn the stove to medium-high heat.

Put the chicken tenders down.  Because they are so thin, it will only take about five to seven minutes for them to be totally done.  While they’re cooking, you can make the homemade ranch dressing to go with them (scroll down for the recipe).

Flip the tenders and for another 4 or five minutes.

Ranch Dipping Sauce

Not all ranch comes from a valley that’s hidden.  This recipe is also good for a party dip to accompany veggies!

Ingredients

  • ½ cup buttermilk
  • ½ cup sour cream
  • ¼ cup mayo
  • lemon juice from 1 lemon
  • salt
  • fresh Italian parsley
  • chopped chives
  • 1 clove of finely minced garlic
  • garlic salt
  • black pepper
  • olive oil
  • 1 capful of white vinegar (or rice vinegar)

Directions

Mix all your ingredients together in a pretty serving bowl with a whisk.

This is the perfect weekday meal that takes only fifteen minutes to make.  Serve with a side of yummy veggies, and you’ll feel great about what you’re putting in your child’s belly!
