Roasted Red Pepper Chicken Sliders

Burgers can often leave you feeling heavy and full… so try this healthier option for your next party: Roasted Red Pepper Chicken Sliders!

This light, healthy and flavorful recipe is just as satisfying as a juicy burger AND doubles as either an appetizer or an entrée!  Tammy’s daughters love them (no easy feat!) and all of their friends do too.

Roasted Red Pepper Chicken Sliders

Ingredients (makes 4 sliders)

  • 1/4 whole-wheat baguette
  • 4, 3- ounce chicken breasts
  • 1/2 red bell pepper
  • 3 Tbsp balsamic vinaigrette
  • 1/4 cup basil
  • 4 Tbsp fat free feta cheese

Directions

Grill chicken breast on each side for 7 minutes or until grill marks appear.

In the meantime, thoroughly wash the red pepper and then slice it into 4 large pieces. Slice the whole-wheat baguette into ¼ inch slices.

Once the chicken is close to being fully cooked, place the red peppers and baguettes on the grill. Allow each side to cook for about 2 minutes or until grill marks appear on each side.

After the chicken, peppers, and baguettes are finished grilling, take them off the grill and allow them to cool for about 10 minutes.

Place a piece of chicken and a red pepper slice on top of the baguette. Next, place 1 Tbsp of feta cheese on top of the red pepper.

Lastly, garnish the slider with 1 Tbsp of chopped basil and drizzle 1 Tbsp of balsamic on top.
