Great Northern Bean Dip Recipe

Our family eats a lot of beans for their numerous health benefits. From time to time, I love to change up the variety to get more of an array of nutrients. Hence, the Great Northern Bean dip recipe came to being, and I have to say it’s a keeper!

There are times when instead of a whole meal all I want is a nice serving of crunchy veggies and/or crackers, and a really satisfying, yummy dip. A healthy dip can be a fantastic way to get in protein and healthy fats to help you better digest your vegetables. Not to mention it tastes great too!

When my son comes home from school if there is not a snack waiting, we’re in serious trouble of a possible meltdown. Let me tell you that bus ride home really works up his appetite. He’s so hungry it’s the perfect time of day to get in a lot of healthy foods, because he’ll eat just about anything at that point. A big scoop of dip and some vegetables is a great way to go. We’ll often follow that up with some fruit too because he is that hungry, and he’ll never be able to wait an hour and a half until dinner otherwise. Can you relate?

The Great Northern Bean dip has a wonderful garlic-lemon flavor, and an ever so subtle kick from the chipotle- nothing too spicy, just great flavor. The little bit of olive oil makes the dip rich, creamy and delicious, while the turmeric adds color and more great health benefits.

Great Northern Bean Dip Recipe

Serves: 8 – 10

Ingredients:

2 cloves garlic, peeled

2 cans (15 oz./425g each) Great Northern Beans (white bean)

¼ cup lemon juice (approximately juice from 1 lemon)

¼ cup extra virgin olive oil

1 tsp. sea salt

½ tsp. black pepper

¼ tsp. turmeric

1/8 tsp. chipotle pepper (or substitute with cayenne pepper)

Directions:

Add garlic cloves to a food processor. Pulse a few times until minced.

Add all remaining ingredients to the food processor, and blend just until dip becomes smooth.

Scrap down the sides of the food processor and blend for a few more seconds.

Serve (*optional – when serving add a small sprinkling of turmeric and chipotle pepper to the top of the dip for added color, and a light drizzle of extra virgin olive oil.)
