Healthy Cauliflower Fried “Rice”

So we are trying to eat a little healthier around the house while also trying to get the kids to eat more veggies. So I experimented and came up with this delicious fried rice made with cauliflower instead of rice. The kids actually love it. I happened to have a purple cauliflower on hand from our garden so mine had fun colors. I’m not going to lie, my daughter was a bit freaked out by the color but got over it pretty quickly.

Ingredients
Spray a pan with olive oil spray (or use 1 teaspoon olive oil)
1 small onion, diced
2 cloves garlic, minced (or cheat and use the stuff from the jar)
1 cup frozen peas and carrots
1 grated head of cauliflower (medium to large) (doesn’t have to be purple)
3 egg whites
2 tablespoons soy sauce
Salt and pepper to taste

Cauliflower Fried “Rice”
Grate the cauliflower in the food processor – you can use the blade or the shredder until it has a rice-like consistency. Leave it in the bowl.

Spray olive oil on a large pan and saute the onion and garlic on medium heat until soft. Add the carrots and peas and cook on medium heat for 3-4 minutes, stirring every minute or so. Add the soy sauce and stir. Then add the cauliflower. Saute for a couple of minutes and while stirring occasionally.

Using a spatula, move the cauliflower mixture to the sides of the pan and add the egg whites. Let cook for a minute and then stir the egg into the mixture. Add salt and pepper. And voila!

I cooked some chicken breast and chopped it up for my husband and son who wanted to added protein.
