Breakfast Cookies with Banana and Strawberries

We’re the first to admit that we love sweet flavors as much as the next person– and we definitely gravitate towards sweet over salty foods. Apparently, the apple doesn’t fall far from the tree, as our kids do too. In fact, if we want to be guaranteed to get Tammy’s kids out the door in the morning without a delay, she’s got a few sweet, but healthy reliable choices that she teams up with a protein for a surefire way to get them to devour their breakfast and get them to school on time. Although kids think they are eating delicious cookies for breakfast we smile (and you will too) knowing we have created a nutritious cookie with only a few ingredients, that can be whipped up in a flash. Enjoy these little guys anytime, but we have to admit, they are a pretty great reason to hop out of bed in the morning.

Why you’ll love it for your body as much as your kids love it for the flavor: The banana strawberry combo adds the perfect dose of sweetness, and we all love the banana (and strawberries!) for their potassium powers! Potassium is so great because it helps to lower blood pressure and to restore normal fluid balance by helping to flush bloat. These breakfast cookies also get some warmth from the blood sugar-stabilizing spice, cinnamon.

Did we mention that these cookies are made from quinoa flakes? Yep, all the nutty flavor you love in quinoa comes in flake form, similar to cream-of-wheat. But don’t worry if you can’t find quinoa flakes- you can always use oatmeal instead (either way, the cookies are made with whole grain). Whip up a batch of these cookies, ASAP! But be warned, cookies this tasty might not stick around too long!

Breakfast Cookies with Strawberries and Banana

Enjoy with a Greek yogurt and berries for a protein and fiber boost—and to make a delicious, healthy breakfast!

Makes approximately 8 cookies

Strawberry_banana_Breakfast_cookie-(long)

Ingredients:

2 very ripe bananas

1 cup quinoa flakes

Cinnamon, for topping cookies (amount based on preference)

A handful strawberries, for topping

Directions:

Preheat oven to 375 degrees. In a bowl, mash banana until very few lumps are left. Add quinoa flakes and mix so that the quinoa flakes and banana form a workable “dough”. Grease a baking sheet, then form four cookies from the “dough”. Top each cookie with a sprinkle of cinnamon. Slice a strawberry or two, and place a slice on each cookie. Bake the cookies for 12-15 minutes, until just golden. Let cookies cool briefly, and enjoy!
