Hearty and Crunchy – Brooke’s “Junk Salad”

This is one of my favorites – it’s a perfect hearty crunchy munchy salad. It’s great for any get together, like a picnic or a backyard party –  guys and gals love it.

Junk Salad Recipe


  • 2 heads iceberg lettuce
  • 1 can of corn
  • 1 can of pitted olives
  • 1 can garbanzo beans
  • 1 quarter onion – finely chopped
  • 1 bag of taco chips
  • 1 bottle of Catalina Island dressing
  • Chopped grilled chicken breast (optional).


Chop lettuce and olives, add garbanzo beans, corn, onion (and chicken if you so choose). Then right before serving, add dressing (amount to your liking) and salt and pepper to taste. Then gently crunch the taco chips and give one last gentle toss.

Serve immediately.
