Pear, Gorgonzola and Arugula Salad Recipe
Ingredients
- juice from half a lemon
- 1 tsp of sherry vinegar
- 1 garlic clove, mashed or minced
- 1/2 tsp of dijon mustard
- salt
- white pepper
- olive oil
- arugula
- one cucumber
- baby heirloom tomatoes
- peeled and sliced pears
- crumbled gorgonzola
Directions
In a small glass or metal bowl, mix in lemon juice, sherry vinegar, garlic, dijon mustard, salt, and pepper. Whisk in olive oil until you have a thick, emulsified dressing. Set aside.
On each plate, assemble a bed of arugula. Take three slices of cucumber, sliced on the bias, and lay out nicely at the side of the arugula.
Slice heirloom tomatoes over the salad to add some color. Fan out a couple slices of pear and place to the side of the salad. Crumble gorgonzola on top.
Spoon a few teaspoons of the lemon-sherry dressing delicately over each salad.
Have a salad waiting at each person’s place when you sit down to dinner, and they will all be so very impressed with your culinary skills!
