Kale and Green Veggie “Ice” Cubes

If you’re like us and most Moms, you’re always looking for shortcuts to save time while you’re also in search of easy ways to squeeze more nutrients into your diet, as well as into your kid’s diets. These Kale and Green Veggie “Ice” Cubes do just the trick! They’re the perfect way to help your entire family to easily get more veggies!

Whether you don’t have the time to prep veggies in the morning to put into a smoothie, or if your kids give you a hard time about eating them, or if the veggies spoil before you get to them, you’re about to meet your new bestie!

A client of ours asked us about these and said she spotted something similar on pinterest—we grew up in a house where our mom was always freezing things to prevent things from spoiling so we came up with these Kale and Green Veggie “Ice” Cubes!

These are a great way to cut down on waste and give your entire family a boost of nutrition. Try it in a smoothie in the morning– the fruit will keep it sweet so the kids will drink it right up and never know they’re getting their greens!

Add two to three ice cubes to your smoothie for a great way to pack your morning with disease-fighting phytonutrients that also help the liver in its detoxification process! (Or as an alternative, you can toss these pups into tomato sauce or any meal to boost the nutrients).

Kale and Green Veggie “Ice” Cubes
Makes 12 Cubes

Ingredients
3 cups kale and spinach, tightly packed
½ cup water

Directions
1. Wash the fresh produce thoroughly.
2. Place the kale and spinach into a blender and add the water.
3. Blend until smooth which typically takes less than 10 seconds.
4. Pour mixture into an ice or muffin tray. Once each slot is full, place the tray in the freezer.

Note: 2 Cubes can replace 1/2 cup of greens in a smoothie recipe
