Make Your Own Thin Mint Cookie Dip

As many of you may know, it was National Girl Scout Day earlier this week, and what better way to celebrate than for you to make some of your own Girl Scout cookies? Who doesn’t love Girl Scout cookies!?

We remember eating them as kids with our mom on our backyard deck, those were the days…

Here is one of our favorite Girl Scout cookies with our own spin – Thin Mint Dip!  Our incredible intern Morgan Blonder gave us this awesome idea and Tammy’s daughters love to dip rice cakes or whole wheat crackers into this delicious chocolate sauce (gotta admit, we love it too!).

By using whole wheat crackers you’ll get fiber which will keep your blood sugar level stable and give you an extended energy boost!

Thin Mint Dip

Ingredients (Serves 40 cookies)

  • 1/2 pound of semi sweet chocolate chips
  • 1/4 – 1/2 tsp of peppermint extract (depending on your love for mint!)

Directions

Melt the chocolate in the microwave and stir in mint. Dip and enjoy!
